How do I make sure that I come up when people type in keywords like: "recording services" and "chicago?" "recording studios" and "chicago," "audio engineers" and "chicago" etc. etc. on the search engines?

I don't do a lot of that, but I would think "Chicago recording studio" would be a good start.....just keep doing it different ways until you find what you're looking for.

Yea, but how would I register that in the first place?
Right now, I don't even know how I could get my site to pop up even if you typed in my name. I have not even the tiniest, slightest of clues.

go to www.dmoz.org. make sure your meta tags on your site are all good.
wait.....and wait...some more becuase all of dmoz.org's entries are first checked and then entered by a human being.
this is what I have done and i show up on 90% of the search engines. The ones you don't show up on you can search for "add url" or look for a link and add your url there
