I don´t know anything about this, so I´d like to know what can I do with S/PDIF outputs that is not possible with conventional outputs.

Since every cable I've seen claims to be low noise, or lower noise or ultra low noise or have some other fancy noise rejection technology employed, what the f&(# are they talking about?
Low noise <digital> cables say they have good high frequency response.
Low noise analog cables say they have good shielding and closely matched conductivity.
And what kind of frequency are they talking about with a slow serial connect like the MIDI standard?

Just another question.
To listen the sound, can I use the unbalanced outputs? Or for this is necessary the S/PDIF?

I mean, to connect the speakers directly to the soundcard.
