recording midi samples

I want to record* some samples to sequence in MIDI for instruments not included in the General MIDI set (dobro, veena, slide guitar, mandolin) and instruments played in non-customary ways. How do I do this?
My soundcard is TBS Santa Cruz**. OS is WinXP Pro.
Vienna Soundfont Studio appears to require Win98 (in any case it doesn't run on my system). What other software could I use?


** Audio recording chain is:

condenser mic (Studio Projects B1)
XLR
mic pre/limiter (Behringer MIC100)
XLR
mixer/equaliser (Yamaha MG10/2)
RCA
sound card (TBS Santa Cruz - 18 bit 44.1kHz, record as WAV)

* sound card FAQ says:
The Santa Cruz DLS Synthesizer conforms to the DLS Level 1
specification. You can download DLS Level 1 banks (*.DLS) or Aureal Native Format banks (*.ARL) to its synthesizer.

The DLS Level 1 standard does not put a limit on the overall size of the sound bank you want to download. Since the Santa Cruz Wavetable engine uses system RAM for storing samples, you will be limited to the amount of memory you have in your system. Keep in mind that other applications will need system memory
as well. A good rule of thumb is to never load a sample bank that is larger than half of your total system RAM.
