I was reading all the good stuff about ORTF mic setup but it also warns about problem with this setup such as "2 signals are summed to mono phase cancellations occur" - What is this really mean?

Is this mean I will get problem with this setup when recording in an environment where the sound re-enforcing system only has 1 speaker in the middle, so everything played in mono via one single speaker.

There is an actual choir which I try to record in stereo by using ORTF but the house speaker is in the middle which will also present the choir in mono. I am recording the sound from the single house speaker and the live choir at the same time.

OK:

What it's saying is that if you combine the recorded stereo signals (mono) during playback, phase cancellation occurs (it always does) and the result frequency response (mainly the low-end) may be skewed too much.

Every stereo miking technique has their drawbacks; and to different degrees. It's up to you to decide what your priorities are for each situation.
