Randomized might be fun, too. I suppose since we put the word CUSTOM in CUSTOMer, we should give the customer whatever serial number they want.

Sure, why not? As long as you keep records everything will be traceable.

If you do, rather than having s/n, you could have c/n or r/n (random number). ;)

I think you should follow the immortal Leo Fender and just randomly assign SNs for the first 15 years.
 
I'd request 7734-40 as my serial number, but you'd have to look at it upside down to appreciate it. :)

I thought that I'd want number 1337, but then you made me realize that 5318008 would be, in fact, the greatest serial number evar!
