New iTunes Question?

So I finished a project in GB and sent it to iTunes. Shows up as a m4a (Mac file) and I'am having trouble posting it anywhere. Question is how do I convert it into a Mp3 on the latest iTunes. Theres know "preference" under edit anymore?

Preferences > General > Import Settings

Then choose "Make MP3 Version" from the Advanced menu.
 
Oh, yeah, and I would suggest telling GB to export to iTunes as AIFF.
