Need some help with my recording setup.

I need a new way to record. I use to record using the Alesis Multimix 8 USB, and would just plug the USB directly into my laptop. But without going in to too much detail, my mixer has gone out on me. I don't really need anything to fancy, maybe about 4-8 channels, built in effects are optional, and keep it under about 300 dollars. But what I really need is to be able to record seperate instruments from the recording interface/mixer onto separate tracks onto Cubase (5) at the same time. That's possible right? How do I do it and what do I need to make it done? I also wanto to be able to play virtual effects on Cubase, like Amplitube, in live time when recording. I know this is possible because I've done it before I just don't know how I did it. There was a little delay when I did it back then but now I have a higher performance computer so it should work better. So what do I need to do to make this possible, what sort of equipment do I need to buy? Any help would be greatly appreciated. Thanks!​
