is it possible to record 2 tracks at once on the tascam us-122?

Yes. If you are using Cubasis, in the arrange window, highlight the track you want to be stereo. On the left you'll see a red mono button. Click on it and it will change to stereo. In Cubasis you cannot record two mono tracks at the same time. Other software may have that capability.
