multi microphone recording

With a standard 8 track recorder is it possible to use more than one microphone while recording one track? And while recording multiple track at the same time?

If you used a mixer to mix down the two inputs they could be recorded on one track. However, the level you mix at can never be changed again.

Yeah, that's where the trouble lies, you have to have the mix exactly right before you record, otherwise you're toast (or you just have to do it over again). Other than that, there's not too much of an issue, usually.
