Can I run 2 delta 1010's in one computer in sync? This would give me 20 ins, and 20 outs, right? If this is possible, can I do it with a 1010 and a 1010 Lt??

Yes both the 1010 and the lt have word clock io so you can sync them together.
Two of them will give you 16 analog I/O - the other 4 are digital s/pdif

Is it better to use the s/pdif from a Pod Pro or Vamp right into the card, or thru the main outs of the pod to a mixer? Is the s/pdif really anything useful?

The incoming s/pdif signal bypasses the delta's a/d convertors, as the signal is already digital. This is handy if you've got got some super outboard converters
