Mono Vs Stereo On Mixers.....Need Help

Generally, what are the mono/stereo channels used for on mixers? Aren't mono channels usually used for the instruments (drums, guitar, bass, vocals)? What are the stereo channels used for? Also, can you hook up insturments to the stereo channels, what do you suggest? Thanks.

Use mono inputs for mono sources and stereo inputs for stereo sources (mainly keyboards, playback decks and effects processors).
