mixing mic and DI recordings

I am recording an acoustic guitar using both a mic and the pickup. The interface is an M-audio Fast Track and the software is Cakewalk Guitar Tracks pro 4. The sound is being captured on one track with the mic on the left and and the pickup on the right.

How should this track be prepared for mixing? should I convert to two mono tracks? I believe that having both recordings on one track limits my panning options.

If you've already got the track recorded, then yes, split it to two mono tracks so you can work on each one separately with impunity. But you really should in the future just set it up to record the two mono tracks directly, saving you the need to take the extra step of splitting the stereo track.

Not sure why some *multi-track* apps default to stereo tracks...and you have remember to change them to mono tracks....? :D

Most of the time there is a stereo / mono toggle button some where on the audio track.
 
Yeah...check the window where you setup/assign tracks for the recording process...there's always a stereo or mono/L/R option somewhere.
