I’m not sure really where this goes but hope you can help!

I have this budget Alto ZMX 862, which works fine for what I need most of the time – mostly headphone jams using my Roland V-Drums in Ch 3/4, XLR Mic in Ch1 and Guitar in Ch 2.

Main Mix usually goes to a little headphone amp to split outputs for each musician.

However I would like to see if it’s possible to use this mixer to send 2 separate mixes for when I’d like to record (to my laptop, just 3.5mm line in).

There will be 2 input sources – My V-Drums (TD-17 - outputs are either stereo 6.3mm line, or stereo 3.5mm headphone) and an audio source (MP3/Phone/CD etc – 3.5mm line).

I’d like to monitor both sources in my headphones, to play along with the track, but I only want to send the output of the V-Drums to the laptop, so it doesn’t record the track from the phone etc.
I did manage to do this with an older Yamaha mixer I had, using the ‘Cue’ function, but think it’s called something else on this Alto, or maybe doesn’t support it?

Please can someone help suggest how to connect all this up if it’s possible to do this with this mixer?

Use the 'Aux Send' output, adjust each channels's level based on what you want to record/not record.

Yeah you could either use the Aux sends for each - or the Mains and Control Room sends. The Aux would give you separate sends.
