Mics for Stereo

I'd like a solid all-purpose mic, but also one available in matched pairs. Primarily for recording stereo orchestra/chamber music. One thats quiet, sensitive, et cetera...but also one which will work well on basic male vocal and acoustic guitar. I've looked at the oktavas and such, and am concerned that an MK-012 will color the sound more than I'd like. I am a big fan of tube mics used on mid 50's to 60's orchestral recordings of the NY Phil and such. I like a warm sound, yet still want an accurate sound. I've set my street price quota at about US$800 and am curious to know what you all think.
 
You like old tube mics but don't want something that colors the sound? Seems to be a little contradiction...?

For your budget, a couple of Shure SM81s, I would say.
 
I record a lot of high school bands and orchestras. The sm 81s mentioned above is what I use most of the time. I have other mics but they really sound good for that. You can get two of them for less than the amount of money you want to spend as well.
 
Save a little bit more and get a pair of Neumann km184's. That was my first set of SDC mics and I have never regretted it. Mine were not matched, but did have sequential serial no.s. You may want to consider a couple Shure ksm32's also. Their reputation is very good.
