I'd also look into the idea that Frank Zappa had for the 6 piece rotating mic array system. I'm not sure that one of these has ever been built, but the idea is a hoop of perhaps around a 3 foot diameter with 6 mic capsules mounted on it, facing outwards, equally spaced. When used with 6 way surround systems with each capsule assigned to a separate playback channel, the tech guy would stand in front of the instrument being recorded and rotate the hoop, giving kind of an inverse Leslie effect of sorts.
