What do artists usually listen to in their headphones when recording in a recording booth? Are they listening to their vocals being recorded or are they listening to the music(beats) that their vocals will be added to?

Whever possible, they're hearing a mix tuned with what they SHOULD hear, which includes their voice (usually processed, not dry).

Ususally they listen to a rough mix (or a special headphone mix)
of the music and their vocals (which you can adjust separately from the rest of the mix).
Abut the processed vocals: It depends, some vocalists (especially the ones who want to sing very very cleanly) want to hear their vocals dry.

They hear what they want to hear..some like to hear just the music, some like to hear themselv's really loud, processed, unprocessed, etc...whatever the singer want to hear. It's not really a standard thing.
