kryboard/midi problem

am i just thick or is my system wrong?!?

just got an Evolution 249c midi controller keyboard. it appears to be working ok... If i select a midi track, set the output to a VST instrument, eg. Neon, the keyboard plays fine in real-time. However, if i set to record a bit of keyboard playing, no vst instrument plays at playback. That is, it appears as if the midi data from my playing has been recorded (there's a midi box with all my notes etc in it) but when I hit play. nothing happens. If I switch the midi track output to the general soundblaster synth, the notes play via the soundcard synth, but if I switch back to the vst instrument, it don't work. what's going on?

Also, can anyone point me to an article/site that explains MIDI to a beginner. Looking at the cubase "getting into the details" pdf file, ther's lots of talk about midi channels etc, which i sort of understand, but there's no clear explaination of how this is implemented in cubase and how you're supposed to work with it. argh.........
 
and I also have no idea how I can set up certain vst instruments so that I can control the knobs/controls on the vst instrument via the assignable rotary controls on my keyboard, if this is possible. any help? like I said above, if you could just send me somewhere to have a read instead of taking the time to answer my question, that would be cool as well! cheers.
 
aaaaaah, sorry about that, I am thick. For some reason I had disabled audio playback, so obviously the vsts won't playback. doh and double doh.

However, I still need help in how to assign vst intrument controls to my keyboard controls - how do I do this? some of my vst instruments allow you to right click a control and then it learns the control, but what about others that don't do this?
