Kind of a dilemma

So, I'd like to have some really really basic home recording set up, that is, guitar-some pedal-interface-computer. I don't have the interface, so since I'm on a budget, i was looking for something on the cheaper side, something like Tascam us 100 or M Audio something...Now here's the dilemma. The good thing about those interfaces is that you can mix the input level with the output level, so that problem with latency would be avoided when monitoring. The thing is, I don't have experience with those interfaces, and before considering buying something like that, I was thinking about building sort of similar system, since I'm somewhat good with a soldering iron.

Here's how I imagined that: I would build the fet splitter from the Jack Orman's site, and also some simple mixer with four inputs and with headphones amp built in. The signal from the guitar pedal would go in to the splitter, and then one output of it would go in some Cab sim, most probably the Condor cab sim from the Runoffgroove site, and then through some simple midi cable like the Alesis guitar cable in to the USB port of the PC, and the other two outputs from the splitter would go in two inputs of the mixer (actually it would be two mixers for stereo set up). The output from the PC would go in to the mixer too, and then in the headphones amp, so I could do monitoring without having latency problems. The advantage of this would be the cabinet simulator. I'm thinking of having the splitter, the cabinet simulator, the mixer and the headphones amp built together in one box, so together with the midi cable, maybe in the end it would turn out something similar to those interfaces like Tascam or M Audio, but then again, I don't know much about digital stuff, so I might be wrong. The thing is that, maybe those ad converters in the interfaces are far better then in the Alesis cable.

The cost of both variants would be similar, so what do you guys think about all this?
