just a few guitar electronics questions;

I have taken out the emg's in my guitar, and put in a 62' fender single coil in the neck, it's big and I had to slant it and it sounds amazing.

There is a humbucker in the bridge that is not powerful enough, and is a lot on the treblely side so I think it is a neck pickup. (need a fat one)

anyway, there is one volume for each, and no tone controls. The selector is a 3 way and the middle position happens to control the single coil, but it is really twangy, but usable sound. How is it cutting the tone of the single coil in this position?

Also, I have a hum happening but when I grab the cable at the guitar end the hum stops, where could the ground problem be?

It sounds like you probably have them wired out of polarity. Fender pickups are wired out of polarity to most other manufacturers, so if you swap the black and white on the neck pickup, you should be fine.
