I'm only going to mic 2 toms

If you have two rack toms, put one mic in between them out about 8" or so. Put the other on the floor tom.
 
Do you mean you only have two toms or that you've only got enough mics to mic two toms? :confused:

If it's the latter just mic the two you like best :D

TR, if one has three mics, is there an advantage to using 1 mic per tom (rack, rack, floor), or still splitting the rack pair into a single mic?
 
One per drum would be better in my opinion if you have the mics to go around.
 
Listen to your overheads and you will get the answer. Which, if any toms need reinforcement? Maybe they sound fine with just the overheads, which frees you up to get more bang for the buck using a room mic or two.
 
yeah...

you can try setting up the kit with the symbols lower than normal, and further back, so the overheads pick up the toms with a little more level than normal.

Or, depending on how your room sounds, you could just raise your overheads.
