He's essentially right. The reasons are, as they say, multifactorial. Let's examine this from the perspective of another profession:

" I'm not a surgeon, and I have no experience with surgery other than being a patient. I've got a pretty sharp kitchen knife, but no operating room or specialized surgical implements. I did a coronary bypass, and the patient died. Why don't I get the same results as the surgeon in the hospital?"

Really- I'm not just busting your balls. I'm pointing out that being a recording engineer, whether a tracking, mixing, or mastering engineer, is a *profession*, and each of those takes years of practice and study to do well. It also requires a specialized room with specialized tools, all of which costs money and takes time. You are like a medical student on your first day in medical school. There isn't a "doesn't suck" button that you can just push to change all of that. Have faith, do what you are doing, and believe that it will get better. Recording at home is the slowest, and most expensive way to do it, but it can also be by far, the most rewarding. This is a very good place to start. Ask smaller questions and you'll get better answers. Begin by reading a whole lot of the newb, studio building and design, and microphone forums. Start by reading all the stickies. What mic are you using on the guitar? Where did you place the mic on the guitar? Your recording just seems to have more midrange and less crispy highs than the original. I think you could get a lot closer with some eq. Try boosting the range above 3kHz and maybe a little cut around 300Hz. But it's not just the eq, it's the resonance of the different rooms, not to mention different instruments. A different guitar, different room and different mic are going to make it pretty much impossible to replicate the tone in the original. That said, I think what you did sounds pretty good.
 
Personally, I prefer the sound of the flute on yours, but the guitar on the original. The instruments in the original versions sound quite clean, but we can hear the room, and the room colours the sound.
