For instance, what would you set the values on a dbx 286s in order to mic an acoustic guitar in an untreated 10X10 room?
 
That depends entirely on the mic used, the placement of the mic and how loud the guitar is, and also what result you want. There's nothing about a channel strip that can really compensate for an untreated room.
 
Set up a mic, dial up the gain until it sounds good, make sure you ain't clipping and go. That's what we all do. Rinse and repeat.
