Extra 2 tracks with S/DIF

I have the M Audio Delta 1010, and i can use the stereo S/DIF in for 2 more simultaneous tracks. Right now i am using an older DAT machince as a D/A converter. It takes in RCA inputs and it sounds OK but its all i have right now so i use it. What is the best thing to do to be able to use the 2 extra tracks without the DAT. Fostex has older 8 channel digital mixers for under $300. They only do 20-bit 44.1 kbs, so i would rather something to do 24- bit and 48 kbs, but I'll take whatever i can. Would there be a big difference if I recorded everything at 48kbs instead of 44.1 kbs. I understand the concept but is it actually noticable. So what are my options? Thanks.
 
Thanks......does anyone have any other suggestions? I'm on a low budget and the ART DIO sounds really appealing because it's only $160 but I have hear a lot of mixed stuff about ART. Thanks.....Josh
