EQ...I'm still a little fuzzy

Ok guys I'm not a total newbie to using my Roland Vs880Xe digital Workstation but theres the little tweakings to my songs I don't quite comprehend. For example I know how to change the EQ of a track right? The problem is I don't hear any significant difference in ANY of the tracks when I do that! Maybe because I don't know what to listen for because I have no idea what it does or how its supposed to sound or even EXACTLY what it is! So please any explanations would be appreaciated in Lamens terms because again I'm not quite the technical geniouses some of you guys are! THanks in advance guys!
