Try checking out the Gibson & Epiphone Guitar Forum, there are plenty of people there that can help you I'm sure.
Just click on this link and either search or register and ask questions.

putting in a neck pickup.. and adding new pots and caps and wiring.
can't find a pic of what's in there for pots
I'm assuming regular CTS or Alphas wont work.. since they're guard mounted.

So your talking about an Emperor regent, II or Joe pass here not an Epiphone Emperor? The original Epiphone Emperor doesn't have any electrics. Which model do you have? Either way I'm still not sure what information your asking for. If you want to swap out existing stuff it's a matter of removing and replacing what do you want to know specifically. I do tons of this stuff... Adding to an original emperor is a different matter.

There are a bunch of emperor models which one are we talking about.

Sounds like an offshore Emperor Regent, which has the neck mounted pup. If you just spray the controls with a quality control cleaner/lube they will last a very long time and be trouble free. Upgrading the pup to a bartolini is a good move, although the guitar, at least the one I owned, sounded excellent with the stock unit.
Wish I had it back...hell I wish I had ALL my guitars back, especially the '58 strat and the '60 Martin oo18...oh well.....
