The difference between the two methods comes across when you listen to the mix in mono. With two separate takes with differences in tone, they'll still sound nice when placed on top of each other. If you just delay the same take, you get a lot of mud. Granted, most people don't listen in mono anymore, but I still think two takes sounds a lot more full.

The problem rediflight is having has to do with the exact same tone being played on two separate takes. No one in the world can play so perfectly in time (even with themself) to avoid phase issues that occur when the same exact frequency is hitting the time line at just that perfect time where it cancels itself out. If a different guitar, amp, or even setting is used, there are enough differences in tone that this cancellation is a lot less likely. The different tone also fills out different frequencies, which gives a much fuller sound. If you're just using a slight delay on one side, you don't get this effect.
 
My mom always used to say " dont be lazy , just pick up your feet and go crazy."

I like to say " dont be lazy , just pick up your guitar and record two tracks and pan them out a little bit and your sound might be a bit more full! "

My mom usually doesnt know how to respond to that though.

the original poster said it sounded almost like a kind of reverb. I'm gonna guess he was hearing a hollowness caused by phase cancellation.
