I tried to de-ess a lisping snake with a stutter once ... what a ssss....sssss...ssssstupid idea that wass.ssss....sssss...sss.

Gonna keep it up til somebody laughsssss.s..s....sss

 
I had to record a dude doing a snake impression once. That's not even a joke.
Rulebook went out the window,lol.
 
I use a 30band EQ on the offending track and poke around until I find the offending frequency. Then dump it accordingly. Works for me. Why make things so complicated?

Ha! I'm Paul, but I can see what you did.
Recorded a children's audio book at uni for a guy and one of the characters was a snake!
Finally got to use that oversized foam head for the sm7b :):)

because you don't want that band reduced for the whole track, just the sibilants. if you cut there, you lose that whole band for the whole track and, to me, it usually sounds worse.

plus sidechaining to a compressor allows for a wider Q so you can cut even more of the "s". if you use a wide Q on just a 30 band EQ like you suggest it's gonna really degrade the track.

i'm a huge fan of the simplest solution, but sometimes the simplest solution isn't too simple.
 
This is how I do it.
After I compress my track (I compress first before eq) I put a de-esser (in notch mode usually the waves) in the known frequencies (4,5,6,7k) where the essing sticks out the most. Then I eq cutting and boosting to my liking. Of course by boosting to my liking I have boosted some esses (not all just the high end) back into my signal. I now put a lpf de-esser on after searching for harsh high up esses. This smooth's out my esses and I now have a very clear top end that if I need more (usually air) esses won't be a problem.
