I finally narrow down my first condenser mic to either a pair of Crown CM700 or a pair of AKG C1000S. Have anyone compared both of these mics before?

I think most of the time, I will be using them for vocal, acoustic guitar, flutes, violin, overhead for choir, and ORTF setup for capturing the entire thing.

Hi there aloe.
Well, I have a pair of the AKG C1000S's. I don't have the Crowns you speak of though, but, I'll tell you, I was really disappointed in the C1000S's. They are OK for vocals, but remember, the microphone is generally the first link in the recording chain. Whenever you can, thats where I feel like, you need to put your money. I have recorded flute before, but I used a shure SM81. It's a little more pricey than the C1000S, but in my opinion, well worth the extra 100 bucks each. I really feel like the Shure SM81's are phenominal on small, acoustic instruments.

There's a review of the cm700's by Rip Rowan on the ProRec web sight.
