Central Station Converters

Is it possible to bypass the A/D/A converters in my Delta 1010 and record or monitor playback strictly with the converters in the Central Station? It seems that it may be possible, but I'm kind of confused with the manual.

YOU CAN monitor your stereo mix but you can't record with it
 
Would the monitoring be done via spdif? If so, I didn't realize that a spdif cable carried a stereo stream. Would you go spdif/out from the card itself or from the breakout box? Would that bypass the Delta converters? Are the CS convertors more highly regarded than the Delta's?
This stuff is still a mystery to me ;~)
