whats the difference between balanced and unblanced cables?
 
Yes, Unbalanced have one conductor and a shield, balanced cables have two conductors and a shield.
 
In a practical sense, balanced cables (running between balanced equipment) provide better defence against interference, although this difference isn't really noticable unless you have fairly long cable runs.
If you have the choice, go balanced (why not?) but remember that everything in the chain needs to be balanced too (your ins and outs) or else you aren't getting any benefit.
 
however, note that it's not the cable that makes it a balanced or unbalanced signal. You can just as easily use a two conductor cable with unbalanced connections...it's just not going to keep your signal the way you want it (balanced). It's the gear that makes things balanced.
I believe your question was probably more towards what exactly is balanced and unbalanced signals, correct? Basically balancing your signal is a way of reducing any electromagnetic or radio frequency interference (which usually turns up as noise) that may show up when you're running long cables.
