Anyone make songs in MIDI andpost up in MP3?

I have a soundblaster live card and I mainly do digital audio recording. I mainly do a lot of digital audio recording but I hear that a lot of pros use MIDI with programs like logic, cubase, and cakewalk. I have all of those programs but when I record in MIDI, no matter what I try to do to it, it still sounds choppy like it is midi and not real.

What I want to know is if anyone here as an MP3 recording that they did in MIDI and explain how you edited it to make it sound good?
