When I create my ProTools tracks should I be using mono or stereo? I just don't want to record a HEAP of mono tracks in the school holidays and then find out that my tracks were supposed to be stereo or vice versa.

I don't know anything about your DAW but the only tracks I record in stereo is my keyboards from the left/right outs.
Everything else is tracked mono and then panned to get my stereo spread.

Is that what you meant?

If your signal is mono (1 microphone for example) record it mono. If your signal is stereo (stereo delay on a guitar for example) record it stereo.

Everythijng is going to be converted to stereo when you mix down so think of what and how you are recording.

Another example - 2 microphones recording an acoustic guitar - now you have to choose, either 1 stereo track with each mic panned, or 2 mono tracks.
