Hey, I just got my MOTU 896 and I was wondering what the AES/EBU inputs were? What's the purpose??

It's the "Pro" digital connection - Audio Engineering Society / European Broadcast Union standard.
It's a standard (XLR) connection, but not with a standard mic cable.

What does that mean I can hook up to it?

It's for making a stereo or dual mono digital connection between two devices. You'd have to use a 110 ohm cable rather than a mic cable though both are on XLRs.
