I still have a lot more of this to do, but it almost feels like I have walls!
instead of studs.

Hmm. What's going on next? i.e. drywall, fabric

If so, Is that a waist of rockwool insulation. Does it get Hot or Cold in thier? What are the next steps to your walls?

The rockwool goes in the interior (and exterior) walls because of its sound attenuating capabilities. Its very dense. The ONLY way to stop sound is through mass and density.

Next will come a triple layer of drywall-OSB-drywall, that, coupled with the rockwool, will make for a VERY DENSE wall that will probably stop a bullet, not to mention a kick drum. ;)
