788 Virtual tracks

i'm a Tascam 788 fan , but still have basic problems.
How can I record virtual tracks ?
The way I use the system (choosing a track from the virtual tracks list, assigning it to a channel, enter, selecting the channel to record, record) it records the new track by cleaning out the previous one ?

ALL the tracks are virtual; including the first eight which are assigned to channels 1-8. If you assign a new v-track to a channel (say v-track #9 to channel 1), by first selecting channel 1, then pressing the TRACK button and selecting track 009, then it replaces track 1, which was previously assigned to channel 1.

In fact, if you do this, press the TRACK button again; you'll now see track 001 on the list of available virtual tracks (tracks 002-008 will still be assigned to channels, thus unavailable). The only way to remove a virtual track from a channel is to assign another track to that channel. This then 'bumps' the first track from the channel.

Tracks bumped from a channel to the virtual list are not cleaned out. They remain intact, and can be assigned back to the channel they came from, or any other channel.

Think of it all as having eight mono recorders, but 250 'reels of tape'. You just move the 'reels' around on the different recorders, or they lay unused/untouched off to the side.
