Why does one need to distinguish between direct or buss (L or R)? What are the advantages of each?

I don't understand why you simply wouldn't record direct and then pan during mix down.

Just between you and me, I always did it this way myself. It works fine if you have a simple 2 or 3 mics and tracks. But when you want to record a whole drum set with 6 mics and bring it down to two tracks "live"...that's why the buss stuff.
 
That reason plus one can record on each track without having to re-patch the mixer. Ie. the mic stays plugged into channel 1 while I now record on to track 2 through the Buss R feature.
Reduces the hassle and wear of channel "Plug in Plug out"
