What are stems?

The answer to this question is probably painfully obvious, but I don't know it. How are inputs in interface devices counted? I see units described as having, for example, 18 inputs. How do they arrive at this number?

Is it possible to swell the volume of a track after the fact? I'm using an Alesis SR16 and would like to swell at various moments. Can I do that without doing a separate take?

When I record using my SR-16, the patterns are suitably loud. However, the pads don't generate nearly as much volume when "hit." Am I doing something wrong? I have to rotate the volume disc to max, which creates unwanted noise.
