Maybe it depends on the guitar or something, because I can plug my Fender Lite Ash Strat right into my crappy little Behringer Eurorack MX602A mixer and then into my Audiophile 2496 soundcard and get a strong enough signal with the gain and level pots at about 12 oclock.

As far as a soundcard/interface goes, you would need an input for every individual track you hope to record simultaneously, so 8 in this case. Take a look at the Delta 1010LT from M-Audio as an example.

Have you gone into your M-Audio Delta Control Panel and adjusted anything there? Under the Patchbay/Router tab, I have my Outputs going to my Monitor Mixer. Then, under the Monitor Mixer tab, you can adjust input levels. Check to see if HW In 1/2 is up high enough.

I've read that, if you do an EQ cut around 5K on the backups, they won't cut through as much like a lead vocal and will sound more "background-y". Haven't tried it yet, but is one of those things that I've socked away to play around with on my next tune.
