You don't want to mix on your phones. Track with them for sure. I'm not familiar with those Sonys but I wouldn't spend a lot on phones. We use ATmd20's in our live room and they're like $30. As far as the KRK's you'll like them for what you're doing. I suggest listening to music you are familiar...

Might be a little cheaper than you want but I'll throw in my two cents for my Epiphone Masterbuilt DR500ME. Electro accoustic LR Baggs, satin finish, dread. Sounds awesome and plays even better. I actually like it better than my Hummingbird.

Check the send level on the firewire software mixer. Sounds like they're set to low. Latency? Yep, bounce it to a new track and align. No way out of that one really.
