I think you're just listening to the wrong music. There's always been a lot of bad music, but there's always been a lot of beautiful music, even in pop music. And even then, music is subjective (although a poor performance will always be a poor performance).

He has some really good, creative licks and riffs in there. It's the lack of contrast that made me lose interest. I find it really hard to listen to stuff that doesn't go anywhere. But that's just taste. The guy is a great guitar player and I wish I had chops like that.

Of course you can. You'll only have 2 tracks to work with at a time, but if you're recording yourself, then that shouldn't be a problem at all.

That solo calls for a ton of reverb and delay, in my opinion. I'd also bring the rhythm guitars down a little bit to make the solo stick out better. Other than that, you've got a good sound to work with, definitely sounds "pro". Maybe you're just being hypercritical of your work? :p
Treat the lead guitar like you would the lead vocal. I know that doesn't help with the specifics, but if get out of the "guitar" mindset, you can often think of things that might work better.
Reverb and delay can help here (use, don't abuse).
Most of that effect is going from silence to having all the instruments come in at precisely the same time. A 40-50 Hz sine tone can help in the low end, or it might not.
Yea, crank those mids, especially on cheap solid state amps. The speaker should give you the bass you need, and add treble to taste, all done using the amp's EQ.
