Yeah, My next laptop will have an SSD and no fan. More than 15 years ago I had a screaming 550MB AV certified SCSI drive tht cost $1,000 in a PC. I had to put it on the other side of the wall and put cables though a hole for the monitor and keyboard/mouse. But it sure beat splicing tape!
In my world of audio for radio broadcasting, I use a couple of different digital recorders with either XLR connections or mini-plug in. I then copy the files to my PC and edit them, mix in needed bumper music, etc.

If you end up with mics, don't leave then on all the time. The pastor's singing or communal prayer will blot out the congregation. Plus they some times make comments to others while something else is going on. If you go recorder at the pulpit, get something like a Sony ICD-UX560, much better...
If you are only singletrack and you need to record an audio snippet and paste it in earlier, record it at the END of the audio file, then copy and paste it over the original bit of audio. Don't try to record over the original file directly. You need software for recording live audio,not MIDI...
Part of the problem is that people see 100's of hours of high-end video and can sense when something is sub-par, even if they can't put their finger on it. That killed the Amiga Video Toaster back in the day.
I know it is convenient to record direcly to a computer, but think this over: A decent digital recorder that saves to SD cards and a fairly pedestrian PC with the software of your choice.

Over the past ten years I have mastered probably 20 discs for music, spoken word and multimedia. Nobody has ever mentioned "Grade A" media. If this company cannot tell you what they mean find another company.
Other considerations
How many other apps/games are you also running? Try closing them. How much free space is on your hard drive? Does your audio app allow for temp files, and where are they? These all could affect the writing of he file.
Consider changing your evironment. There are several semi-circular enclosures with foam inside to block some noise. In my world, I do a weekly pre-recorded show in what used to be a dormroom. The Shure studio mics that were fine in a studio picked up all kinds of room noise, but my performace...

I use there product to even out a recorded radio show. I tend to get soe guests that get quiet when they are trying to be sincere and this saves me a lot of trouble. I use Adobe Audition 1.5 to manually remove lip smacks, uhhhhhs, etc.

Sampling rate?
Digital recorders have different sampling rates, often divided into telephone quality, AM radio quality, CD quality, etc. If your sampling rate is low, all the treatments will not help. Just a thought.
