You can use an interface to record drums as well as anything else that you chose to plugin to it. How many channels does your interface have. Maybe you'll have to adjust your drum recording technique based on how may available channels you have.
One of the guys that recorded my band live that we had this issue with is a sound engineer for the sonics! I mean everything sounded great except the voice was just too loud and almost overpowered the entire mix.

To be perfectly honest i'm not a big fan of any of these three (although very talented) guitarists. My personal favorite would be Chuck Berry, I mean hell who hasn't ripped him off? He may have recycled the same riff hundreds of times, but it was a bad ass riff!

I like the blue encore 100i allot for voice, guitar or drums. I don't think it would work very well for christian rap metal jazz zydeco. Sorry to not be of much help Greg since this genre is relatively new to me. Where is this type of music traditionally found?

Personally I'm not a big fan of any part of a live recording coming off of the board, because the people doing them(not me!) always have way too much voice in the mix. My favorite way to do a live recording is just to find a spot in the club where it all sounds good and just setup a single LDC.
