I don't think so, L and R to us a bus should be preserved. More likely, using 2 busses is giving you a different latency in one side. Easy way to tell is to put a strong effect like distortion on just one guitar track. Listen to the single bus and see if it is still only on one side.
I think that is just ambient noise. Even though the mic is usb, it still will pick up a mouse fart in the other room. It does sound like you have a ton of gain though even though you said it was on minimum. What software are you using and how? Could be that optimizing your signal chain will help...

In your defence (god knows you need some) a lot of kick drums are mic'd with a speaker. Get it right, and the speaker only picks up everything...
For software, most DAWS have a home version that sell from $50-$100. SonarEssentials I think is $49.95 and gives you everything you need. Another good one is Reaper which is free to try, and if you like like it, you pay a very small fee, more if you use it commercially.
