You should be able to leave both of the connected using a firewire hub and change the driver in the software to whichever you want to use at the time. You'll probably need to power down whichever one you're not using.

Your best bet is probably going to be an attenuator. Something like this should work. And MIDI cannot be converted to a line level signal. MIDI is data, only. No sound goes through a MIDI cable. Just curious...Why do you want to record to the video camera? There may be other options.
