You can get more or less the same sound by hooking a tiny chain to the center of your cymbal and let it hang down towards the edge of the cymbal. And you will still have your cymbal in un-drilled shape.

If you buy the SM7, you will need a preamp with a good amount of clean gain. It will work from a decent console but I wouldn't hook it up to a cheap portastudio or anything. What are you recording through?

Centered snares sounds like drummachines to me. The snare isn't in the middle of the set to begin with, so why the hell would you want it there in the mix. Oh yes, if it gets played in a club, but then were back at the drummachines again. Make it sound natural within the stereofield of the set.
