If I'm tracking with my peaks around -12, after all tracks are done - do I just move my master fader down until the peaks from the master out are at -12?

I want to avoid using presets altogether-
But i have to admit - I've been using presets on my condenser for every track.
I want to get away from it - but (and I think i can blame my speakers) I can't hear any real difference unless I use extreme settings.
The presets are seeming to do alright...

Most of my songs Don't really have a hook - and I wouldn't consider them too catchy.
But once in a while I come up with one and there in the chorus - there's the hook! I've never set out to write one.
