You could just resize them. Make sure snap is turned off if the cuts aren't right on a beat. It's the >|< button on the top tool bar. You could always use the cut tool and put the two pieces in the same track too. That's the scissors button.
Not sure what the issue is but I would try connecting the pedal and record direct. Your GT-10 will basically work as an interface. This way you skip a D/A conversion and a A/D conversion. Guaranteed it will sound better.
Could it be you have some monitor buttons engaged from when you recorded? DO you have the outputs configured correctly? Can you see that you've recorded something?

You know I've never really noticed that. I'm not sure what the point is of setting a default. Maybe just for when you create new tracks it uses that as your input.
To see a level in cubase you need to click the monitor button. Is that clicked on both tracks.
Did you try recording?
I don't know that interface but could it be a routing problem with the interface?
So you've picked input 4 as your source. Is that what your mic is plugged into? I have a feeling it's 1 or 2. Also you won't see a level unless you hit the monitor button which is the little speaker beside the record button.
EDIT: On your MBox are those little front/rear buttons set right?
Your using a Mono track with a stereo in. Click add bus and create a Mono buss with the correct input. Then make sure that's the input on the track your trying to record on.
