    sounds like a buffer problem. Try increasing it to 256...and try out the other settings to see how they work. Usually there is a happy medium that the PC likes the best.

    Try recording into the soundcard from the analog outputs of the j-station...if it still shifts the pitch, then the card is probably your culprit.

    You should be able to put each trigger on any one of the 16 channels that the midi cable carries. You would probably have to make this assignment in the drum module that you are using.

    Plug the midi out of the dm5 into the midi in of your soundcard. Then create a midi track in cubase. You will record the midi information (not audio, just notes/velocities, etc). You can then route this midi track to another instrument, for example the LM drum machine that comes with cubase...
