Steve, S/PDIF (Sony/Phillips Digital Interface) carries a similar signal, but only two tracks at a time, whereas ADAT interfaces can carry eight tracks at once. I assume by your comment that you're working with a lightpipe S/PDIF port?

Certainly. I hope I wasn't implying that you would find poor quality using the Behri as a submixer... just that it wouldn't be the same (very high quality) that you find in the Apogee's pre-amps. ;) For submixing a set of drums, the setup described would be a fine solution.

One could use the Behringer as a submixer, sending the main L/R output to the Duet's 1/4" inputs. Pro's: Ability to use as many inputs as the Behringer has. Con's: Inability to edit the individual signals once they are submixed. You also can't use both of the Apogee's mic preamps and 1/4"...

Did you check to ensure that the project file and the original recording have the same sample rate? Drums recorded @ 44.1kHtz and imported into a 96kHtz project (or vice versa) would cause issues similar to what you're describing...
