Cubase is a good DAW! (I have Sonar 7PE)
Why don't you just record straight into Cubase and take your Zoom back to the store. You probably won't have to much need for it. You can then record your individual tracks and mix to taste. I actually still own my Zoom 1266 and record on it alot still...

You can most definitely do what you want to do, but headphones will not yield great results. I understand the theory of not having another option and for rough mixes, but it is basically bad practice.
Unless you simply don't care about what people think of the quality of your music, keep mixing...
